I hope you like beer because Baltimore Beer Week is going on right now. I have a recently acquired appreciation of beer. I grew up in a small town in the Midwest with beer options like Bud Light, Miller, and Michelob so I really disliked beer. How was I supposed to know it all didn’t taste like yuck? I have the beer scene in Baltimore to thank for showing me the light. You will find me this week sampling IPA’s and sipping on stouts. Also, LEAR at Single Carrot Theatre runs through October 29 and I encourage you to go see it. Baltimore has such a huge offering of local theatre you would be remiss to not take advantage of it.

Korean cuisine is balanced by the seasons — stews tastes best in cooler weather and vegetables that grow in cooler weather taste best in stew — so during our stay we’ll do seolleontang (white beef stew), miyeok-guk (seaweed stew), sundubu-jjigae (soft tofu stew) and beoseot-tang (local mushroom stew) all for health and clarity. Dishes other than stew, like bossam and pajeon, will be available too. Karma Farm will supply us with all manner of fall produce including winter squash, garlic, turnips, herbs and radishes and meat will come from local growers too. All stews will be fortified with sustainably harvested seaweed from Salt Point Seaweed in California.

At one time, all beers were sour to some degree. As pure yeast cultures were not available, the starter used from one batch to another usually contained some wild yeast and bacteria. Unlike modern brewing, which is done in a sterile environment to guard against the intrusion of wild yeast, sour beers are made by intentionally allowing wild yeast strains or bacteria into the brew. Traditionally, Belgian brewers allowed wild yeast to enter the brew naturally through the barrels or during the cooling of the wort in a coolship open to the outside air – an unpredictable process that many modern brewers avoid. This event will feature 15 different sour beers from around the country.

Proceeds will again go to BARCS to help them continue their good work! There will be prizes for the top brewers and there is space for 40 brewers.
